Food malnourished horses?

I work at a privately run small equine rescue and we recently acquired three emaciated horses desperately through the MSPCA. They are all high horses (one is 32yrs old!) And are stable and slowly recovering. I was wondering if anyone had advice and experience in the treatment of these cases (additions diet, exercise, etc.) that could help the recovery process speed-up/ease. More food is not the answer even though these horses are old (too old to walk) still do not want to risk overeating and causing them to founder, painfully. thanks
